Tiramisu

Ingredients: (makes a 7" cake) Espresso Syrup: 1 tablespoon instant espresso/ strong coffee powder 1/2 tablespoon sugar 1/2 cup (125ml) boiling water 1 tablespoon Marsala (I used Baileys Irish Cream) Filling: 250g mascarpone cheese 1 1/2 teaspoons vanilla extract 3 tablespoons icing sugar 2 tablespoons Marsala (I used Baileys Irish Cream) 1 cup (250 ml) heavy/whipping cream about 24 sponge fingers (savoiardi) 50g dark chocolate cocoa powder, to dust dark and white chocolate shavings (optional) strawberries for decoration (optional) Method:  To make the Espresso Syrup: Dissolve instant espresso coffee powder, sugar in boiling water. Leave to cool. Stir in 1 tablespoon Baileys Irish Cream. Set aside. To make the Filling: In a mixing bowl, with a manual whisk, whisk mascarpone cheese with icing sugar, vanilla extract, Baileys Irish Cream and 3 tablespoons of the espresso syrup until blended. butter milk chicken

500g boneless chicken, cut into cubes/strips Cornflour Butter or margarine, 4-5 tablespoons 1 stalk curry leaves Dried chillies, chopped, to taste (you can use fresh cili padi, if you want) Evaporated milk, 150ml ( susu cair ) 2 tablespoons white sugar, 1 tablespoon brown sugar (adjust as you like) Salt and pepper, maybe some chicken stock What to do: Season chicken with salt, pepper and chicken stock. Coat with corn flour and fry. (deep fry or shallow, I just used shallow frying) Try and get it golden brown. Set aside. Melt butter over a gentle heat and fry chopped chillies and curry leaves until it starts to smell good *drool* Add evaporated milk and sugar. Stir until the sugar is dissolved. Keep the pan on the heat until the sauce is nice and thick. (Butter should be combined with milk - just like white sauce!) Add in fried chicken. Mix well to cover in the sauce. Serve!

sushi rice

1 TB vinegar, 1 TB sugar 1/2 Ts salt. Add to rice half cooked.

Oreo Chessecake

Oreo Cheesecake Ingredients Ingredients Crust: 250g Oreo Cookies (remove cream) 50g butter, melted FILLING: 250ml whipping cream 500g Pheladelphia cream cheese, softened 100g caster sugar 24 Oreo cookies Directions CRUST: Combine cookie crumbs and butter. Press into a 21cm loose bottom pie pan. Place in freezer while preparing filling. FILLING: Whip cream until stiff peaks form. Place in refrigerator. Whip cream cheese until smooth. Add sugar and blend. Coarsely chop 24 Oreo cookies and fold into cream cheese mixture. Fold in whipped cream. Turn filling in crust and spread evenly. Cover and refrigerate at least 4 hours. Loosen cheesecake by running knife around edges. Release sides of pan.

Basic Yeast Dough

Ingredients: 500gm pau flour,sifted ( I use Blue Key Brand Pau flour ) 6gm instant yeast 100gm sugar 50gm shortening 250gm water Fillings : 1 tbsp oil Some chopped onion 500gm Char Siew, chopped into small pieces 1 tbsp oyster sauce 2 tbsp soya sauce 2 tbsp sugar 1/2 tsp dark soya sauce 1 cup of water Some cornstarch for thickening 1. Mix instant yeast and sugar in the water till dissolved. 2. Then mix everything together and knead into smooth and elastic dough. 3. Divide the dough into 40gm dough (you can get about 18 portions). Put aside and let it prove until double its size. Estimated about 10 minutes. 4. Filling:   Heat oil in a pan and sautee the onion till fragrant. Add in char siew and the rest of the ingredients and mixed well. Then thicken with some cornflour. Dish up and leave to cool before using. 5. Roll dough into a round shape and add 1 tbsp of filling and pleat the top into a pau. Line pau with a piece of white paper and let it prove again for another 20 minutes

Muah Chee

Ingredients (A) 340g glutinous rice flour 290ml to 310ml water 2 tbsp sugar (B) 4 tbsp cooked groundnut oil or any cooking oil Note: Cooked oil here mean to heat up the oil. Let it cool completely before use. Groundnut mixture (mix together): 175g toasted peanuts, pounded 75g toasted sesame seeds 250g granulated sugar Method Mix (A) well to form a smooth and soft dough. Make into thin pancakes. Bring water to boil in a deep sauce pan. When water boils, gently drop the dough in one at a time. Wait until they float to the surface, then scoop out and transfer to a bowl. Mix in 4 tbsp cooked groundnut oil. Mix well to form a soft and slightly sticky dough. Cut out Muah Chee pieces and coat with groundnut mixture

Oyster Sauce Vege

Ingredients : Vege Garlic Scallop Oyster Sauce Cornflour Soya Sauce (1) Boil/Fry vege (2) Fry garlic till brown  Pour water and scallop into pan and fry Add oyster sauce Mix cornflour with water and add into pan Add soya sauce

Garlic Soya Prawn

Ingredients : Garlic Prawn Soya Sauce Sugar (1) Heat prawn on pan till cooked (no need use oil) (2) Fry garlic with oil till brown Add prawn in and fry Add soya sauce and sugar.

Salted Rice (Ham Fan)

Ingredients : Scallop Mini Prawn (Har Mai) Lap Cheong Garlic Mince Meat Black Sauce Salt Chicken Stock Vegetable (Mushroom, Cabbage) (1) Fry Garlic with oil till brown Add Mushroom, Meat, Mini Prawn, Black Sauce, Chicken Stock, Salt Vege. Take out from pan and set aside (2) Fry Raw rice (for fragrance), Add scallop (3) Pur rice in rice cooker (with scallop) Add water (use scallop water if can. Sweeter) Wait till got steam coming out of rice cooker, open cooker and put (1) in.
